Let’s talk about your home town. Where were you born?

I was born in a place called Rochester in the Medway towns in Kent.

Do you still live in Rochester?

No, I haven’t lived in Rochester for a long time now, since I went to college. I live in London.

Do most people like living in Rochester?

I guess they do. I always wanted to live in London, so… my family still live there, but I guess it’s a nice place.

Why?

Well, it’s got beautiful architecture and it’s the home of Dickens and so there’s quite a lot of historical interest there and you’ve got countryside nearby and it’s easily accessible for London.

Do you think you’ll stay in London?

Oh, I don’t know. I’ve been here for quite a while now and although I love it, I can’t imagine spending my whole life here.

I’d like to move on to talk about sport. What’s your favourite sport?

My favourite sport to watch is football, but to participate in, it’s swimming.

When did you first become interested in swimming?

Gosh, when I was a child, my dad used to take me swimming every week and I swam for my school.

How often do you participate in swimming now?

I try to swim at least two times a week.

What equipment do you need for swimming?

The great thing is that you don’t really need any equipment apart from goggles and trunks.

Where do you go swimming?

Anywhere I am. I love swimming in the sea but mainly I swim at my local pool.

Now, let’s move on to talk about shopping. How do you feel about going shopping?

I don’t mind going shopping. I like to know exactly what I’m going shopping for, though, I like to get in, buy it and go home again.

Do you like buying clothes or goods on the Internet?

I’ve never bought clothes on the Internet because I like to try them on before buying them but I’ve certainly bought electrical goods and other things on the Internet.

What don’t you like about shopping?

I don’t really like big crowds of people and fighting my way through them to get what I want. I guess I don’t like paying for it all.

One dish that I know how to make really well is vegetable stir-fry. It’s a dish I often prepare for lunch or dinner, and I find it quite simple and quick to make.

The dish is not difficult to prepare at all. It takes me about 20 to 25 minutes from start to finish, which makes it a great option for a quick and healthy meal. I can make it even faster if I have all the ingredients prepped in advance.

The ingredients are very versatile, but the basics include:

Mixed vegetables (like carrots, bell peppers, broccoli, and snap peas)

Garlic (a couple of cloves, minced)

Ginger (a small piece, grated)

Soy sauce (for flavor)

Sesame oil (for stir-frying)

Olive oil (or any neutral oil)

Optional: Tofu or chicken (for extra protein), sesame seeds, and chili flakes if you like a bit of spice.

Preparation:

1. First, I prepare the vegetables. I chop the carrots, bell peppers, and broccoli into bite-sized pieces. I usually use a mix of fresh vegetables, but sometimes I use frozen veggies for convenience.

2. Next, I heat a wok or large pan over medium-high heat and add a little olive oil. Once the oil is hot, I add the minced garlic and grated ginger and stir-fry them for about 30 seconds until they become fragrant.

3. Then, I add the harder vegetables first, like carrots and broccoli, because they take longer to cook. I stir-fry them for about 5 minutes until they start to soften. After that, I add the quicker-cooking vegetables, like bell peppers and snap peas.

4. After everything is well-cooked but still a little crisp, I add the soy sauce and a small drizzle of sesame oil. If I want to make it spicier, I can also add some chili flakes or a dash of hot sauce.

5. If I’m adding tofu or chicken, I’ll prepare that separately and mix it into the stir-fry just before serving.

6. Finally, I garnish with sesame seeds for a bit of crunch and serve it hot.

This dish is very customizable, so I can adjust the ingredients based on what I have at home or my personal preferences. It’s a balanced meal with lots of vegetables, and it can be made vegan or with protein depending on what I choose to add.

Why do you think some people find cooking difficult?

I think cooking can be difficult for some people because it requires a bit of practice and familiarity with ingredients and techniques. Some might find the steps and timing challenging, especially when juggling multiple things at once. Also, if someone isn’t used to being in the kitchen, they might not know how to manage the different tasks, like chopping ingredients, cooking them at the right temperature, or seasoning to taste. It can feel overwhelming if you’re not confident in your skills.

Do you think people enjoy cooking more now than in the past?

I believe that people are definitely cooking more at home nowadays, partly because of the rise of food-related TV shows, social media, and cooking tutorials. There’s more access to recipes and cooking techniques than ever before, which makes it easier for people to learn. Also, with the increasing focus on healthy eating, people are becoming more interested in preparing their meals so they can control what goes into their food. However, some people still prefer the convenience of eating out or ordering food because of their busy schedules.

Do you think cooking is an important skill to have?

Absolutely! Cooking is a vital skill, not only because it allows you to create healthy, home-cooked meals but also because it can be a way to bring people together. Being able to cook helps you save money compared to eating out all the time, and it gives you more control over your diet. It can also be a fun and creative activity, as you can experiment with new recipes and flavors. Cooking is a useful life skill that can bring a sense of accomplishment as well.
