The illustration highlights the main stages involved in the production of two types of Pu’er tea.

The whole process for both types of tea starts with the deactivation of the enzymes in the raw material, the so-called Yunnan big-leaf. Once the enzymes have been deactivated in the leaves, they are then rolled. After this, they are left outside in the sun in order that they can be sun-dried. It is at this particular point that steaming and pressing the leaves into shape will result in a type of tea which is called Sheng Pu’er.

However, the other type of tea needs further processing after being sun-dried by entering a post fermentation phase. The leaves are then subjected to an air drying process which is subsequently followed by the leaves being steamed and pressed into the desired shape. This particular product is known as Shu Pu’er.
